Why all the fuss about eating raw foods?

You hear more and more talk all the time about eating raw foods — why all the excitement? Primarily, because people are discovering that the best way to eat raw food is the way it comes to us — raw (uncooked). For example, dietitians and nutritionists are discovering that cooking food can destroy important enzymes which are normally present when that same food is raw. Many people eat uncooked foods without any health problems at all — by developing a well-balanced diet, they are assured of getting all their necessary nutrients. In rare cases where additional nutrition may be necessary, nutritional supplements can be added — calcium, iron, zinc, etc.
